Plum Pie

First of all, apologies – I don’t mean to turn this into a food blog. It is simply down to the fact that August and September yield so much of our lovely homegrown vegetables and fruit, that it is hard not to come up with some mouth-watering recipes.

My little daughter loves to toddle off into the orchard and eat apples and plums with me. It has been raining so much these past few days, however, that it felt like a great time to do “something” with our abundant plum harvest.

Below is a recipe which is just right for the last days of summer and the chillier mornings and nights of early autumn.

Wash the fresh plums and remove the stones by cutting the plums lengthways into two halves.

I made this cake with:

  • 200 grams of butter
  • 200 grams of sugar
  • Vanilla sugar (you can make this easily yourself by placing a vanilla pod in a jar with sugar – the sugar will absorb a lovely vanilla flavour)
  • A pinch of salt
  • 4 eggs
  • 300 grams of plain flour
  • 2 tsp baking powder
  • 200 grams of desiccated coconut

Mix the butter, sugar, vanilla sugar and salt in a bowl and beat with an electric mixer until you get a “fluffy” consistency.

Add the eggs one by one, then sift the flour and baking powder into it and stir. Finish by adding the desiccated coconut.

Place it in a metal baking dish of about 25cm/10” in diameter, preferably one where you can remove the rim.

Place the plum halves in a circle work your way inside out until you have it neatly covered and push them into the dough a little.

Bake it for 60 minutes at 175C/347F.
